You’ll lick your fingers when you try this delicious and healthy dessert. This refreshing dessert is made from raw ingredients, which means that it’s absolutely healthy.
The “Cheese” is made from nuts.
- – 100g. almonds,
- – 200g. walnuts,
- – 1/ 2 cup dates,
- – salt (Himalayan or sea salt)
- – and cinnamon.
For the filling:
- – 200g. strawberries,
- – 3 cups of cashews soaked in a water,
- – 1 cup of dates,
- – Himalayan salt,
- – 1/2 cup of coconut oil,
- – 1 cup of honey.
Preparation: soak the almonds, the walnuts and the dates in water for at least 1 hour. Then drain them and grind in a blender until you get a sticky paste. Add a pinch of salt and cinnamon. Pour this paste on the bottom of the pan.
Making the “cheese”: soak 3 cups of cashews and 1 cup of dates for at least 1 hour. Then grind them in a blender with half of the prepared strawberries (at least 100g ), 2 cups of water, 1 tsp. salt, 1 /2 cup of oil . Whisk and add a little water if necessary. The “cheese” shouldn’t be dense, but not completely liquid. Depending on your taste, add honey (1/ 2 cup) if you want the filling to be sweeter. Pour this over the crust.
Finally, make the top layer in a blender, put100g. strawberries , 1/ 2 cup honey and 1/2 cup of water . Pour this paste over the “cheese” and leave the cake in the freezer for at least 3 hours.
