Broccoli Soup (Bob Greene Diet)

This broccoli soup is so delicious that you can eat it hot or cold. As you prefer. It is one great recipe from the Bob Greene diet.

Creamy Broccoli Soup

Ingredients:

  • vegetable oil
  • 1 thinly sliced leeks
  • 3 cloves garlic, chopped
  • 1 onion, chopped
  • 1/2 teaspoon thyme
  • 1 medium potato, finely chopped
  • 2 large stalks of broccoli, chopped
  • 4 cups of water
  • 1/4 teaspoon salt

Preparation:

Sprinkle little oil on leek, garlic and port. Lightly sauté, until it gets slightly brown, about 5 minutes. Add four cups of water, thyme, potatoes and broccoli. After it boils, cook for another 2 minutes.

Blend it and season with salt just before serving.
