Enjoy Your Cherry Tomatoes – Make Delicious Bruschetta!

I love cherry tomatoes – yellow, orange and of course, the red ones! What better way to enjoy them than with some bruschetta. The skins are tough, so this recipe calls for boiling the tomatoes for a minute and removing them. It’s a labor of love with all those little tomatoes, but it’s worth it. They’re packed with flavor and nutrients! So here is one recipe for bruschetta topping:

~ 1 lb cherry tomatoes (par boiled 1 minute, skins removed)

~ 8 leaves basil (julienne)

~ 4 cloves garlic (minced)

~ 1 tbsp avocado oil

~ 1 tbsp balsamic vinegar

~ 1 tsp salt (to taste)

~ 1 tsp pepper (to taste)


Rinse the tomatoes.

Par boil the cherry tomatoes in lightly salted water for about a minute. Drain. Remove the skins by pinching them off but be careful! They’re hot!

Slice the tomatoes.

In a bowl, combine all of the ingredients. Stir.
