Gluten-Free Breakfast: Quinoa Pancakes

Delicious quinoa pancakes with fruit topping!

Ingredients:

Topping:

  • 150g. plums
  • 150g. blackberries
  • 150g. honey

Preparation:

Remove the seeds and cut the plums in quarters.

Simmer the plums, the blackberries and the honey over medium heat and let it caramelize for 5 minutes. Gradually add 100 ml of water. When you add all the water, cover it and let it cook for about 10 minutes.

Mix the ingredients for the pancakes and mix until you get a mixture for pancakes.

Heat the pan with a little coconut oil on medium heat and fry the pancakes.

Serve it with fresh fruit and topping.
