Buckwheat is a very healthy food and we need to eat it more often. Here’s a suggestion how to do that…
- 250 g. buckwheat,
- 300 g. mushrooms,
- 1 onion,
- 1 leek,
- 2 tbsp tomato puree,
- 2 cloves of garlic,
- a little caper,
- olive oil,
- pepper .
1. Mix the buckwheat with 2 cups of water and cook for 15 minutes, while grain absorbs all the liquid and soften.
2. Meanwhile, in a pan with olive oil, fry the sliced leek rings. When they get soft, add the sliced onion pens, the sliced cloves of garlic, the mushrooms cut into cubes, season it with salt, pepper, cover and cook until the mushrooms release their juice and that juice evaporates. Halfway add tomato puree.
3. Add the buckwheat porridge, a handful of capers and cook it for several minutes.
Serve it hot and you’ll like it a lot 🙂
