Ingredients:

  • 3 cloves
  • 4 tbsp of olive oil
  • 1 chopped onion
  • 2 tsp thyme
  • 4 cups vegetable stock (optional, you could use water instead)
  • 1/2 cup milk (almond, rice, coconut milk)
  • salt
  • pepperRoasted Garlic

Preparation:

Preheat the oven to 180 ° C.

Take the cloves from the garlic and without peeling them, put them in aluminum foil. Pour 2 tablespoons of olive oil and season with salt. Place it in the oven and bake for about 45 minutes. Remove and allow to cool.

When its cooled, peel the garlic and put it aside. In a large pot over low heat, heat the remaining 2 tablespoons of olive oil. Add the onion and thyme. Simmer for about 10 minutes. Add the garlic and saute for about 5 minutes.

Add the stock, reduce the heat to low, cover and allow to cook for about 20 minutes. Move the mixture into a blender and blend until the mixture is compact. Add milk, salt and pepper, mix well and serve.
