Tofu Dip – Makes Love With Your Food


8 oz. tofu
1/2 large ripe avocado
2 garlic cloves, chopped
2 tsp. fresh ginger, minced
1/2 cup parsley leaves, stems removed
2 tbs. lemon juice
1 tbs. peanut butter or sunflower seed butter
1 tbs. applesauce or a little honey

Blend all the ingredients in a food processor until very smooth and voila…Here is your own tofu dip! You can serve with fresh vegetables or crackers or use it as a sandwich filling.

Makes about 2 cups.
